THAI SALAD

Ingredients
- 240 g of Pulled Oats® Nude
- 1 cucumber
- 1 bell pepper
- 1 carrot
- 3 celery stalks
- 3 Spring onions
- 250 g cherry tomatoes
DRESSING
- 100 ml light soy sauce
- 100 ml Rapeseed oil
- 100 ml orange juice
- Lime juice and zest
- chili
- Roasted sesame seeds
- Peanuts or cashew nuts
- Basmati rice
Instructions
- Slice the cucumber, bell pepper, carrot, celery and spring onion into thin strips. Cut the cherry tomatoes into four parts.
- Combine all the dressing ingredients together. Adjust to taste with any of the ingredients. Pour the dressing over the salad and stir. Refrigerate and let the flavours blend before serving.
- Fry Pulled Oats® in oil in a pan for a few minutes. Season with salt and pepper. Let the Pulled Oats® cool before adding to the salad.
- Cook the rice according to the instructions on the packet. Serve the salad with basmati rice and garnish with sesame seeds and nuts.
