Tacos w/Radish and Habanero Salsa

Ingredients

  • 1 Pack Pulled Oats® Tomato or Nude
  • olive oil
  • ½ red onion
  • 2 tsp cumin
  • ¼ tsp cinnamon
  • 1 tbsp paprika powder
  • 1-2 garlic cloves
  • 2 avocados
  • 2 tbsp fresh coriander
  • 2 tbsp fresh mint
  • 3 limes
  • Salt and pepper
  • ½ iceberg lettuce
  • 8 small soft tortillas or corn tacos
  • 5 cm cucumber
  • 5 radishes
  • 2 tomatoes
  • ½ red onion
  • A piece of habanero
  • 1 tbsp fresh coriander
  • 1 tbsp fresh mint

Instructions

  1. First make salsa. Dice cucumber, radish, tomatoes, ½ red onion and ½ habanero.
  2. Mix and add ½ of 1 lime juice and a pinch of salt.
  3. Next in another bowl mix avocado, coriander and mint. Add juice from 1 lime and pinch of salt & pepper
  4. Chop garlic cloves and red onion. Fry in pan on low heat with cumin, cinnamon, paprika powder and ½ habanero. Cook for 2-3 minutes.
  5. Turn up the heat and add Pulled Oats® Tomato. Fry for 2-3 minutes.
  6. Stuff the tortillas/tacos with sliced iceberg lettuce, avocado mix, Pulled Oats and salsa. Serve with a wedge of lime..
