Pulled Oats® Red curry asian stir fry

Ingredients

  • 2 lb Pulled Oats®
  • 6 oz red curry paste
  • 15 portions cooked rice noodles
  • 1.3 lb blanched broccolini
  • 4 tbs minced ginger
  • 8 oz lime juice
  • 3 tbs minced garlic
  • 8 oz soy sauce
  • 1 lb sliced shitake mushrooms
  • 1 lb sugar snaps
  • 4 sliced paprika
  • 30 cut radishes
  • 7 tbs sesame seeds
  • sesame oil for frying

Instructions

  1. Fry the ginger, garlic and vegetables with sesame oil in a wok pan until slightly browned.
  2. Add Pulled Oats® and fry for further 2-3 min.
  3. In a separate bowl mix the curry paste, soy sauce and lime juice to make a paste.
  4. Add to the vegetables and Pulled Oats®
  5. Heat through and add the rice noodles and sesame seeds.
  6. Serve with fresh coriander and lime wedges.
