Beetroot-tzatziki burger

Lovely tzatziki replaces ketchup in this burger. Sweet beetroot gives contrast to acidic tzatziki.

  • 1 pack Pulled Oats® Hamburger
  • A handful of rocket (arugula)
  • 1 red onion
  • 1 big beetroot
  • 4 hamburger buns
  • 200 g Greek yoghurt
  • 200 g goat cheese or feta cheese
  • 4 tbsp mayonnaise
  • 1 tbsp Sriracha sauce
  • 3 tbsp fresh mint
  • 6 radishes
  • Juice and zest of 1 lime
  • Salt
  • Black pepper


  1. Mix the tzatziki ingredients in a bowl. Let sit in the fridge.
  2. Thinly slice red onion and beetroot.
  3. Barbecue or fry on a pan the patties for 2 – 3 minutes on each side.
  4. Warm up or toast hamburger buns.
  5. Assemble hamburgers. Spread tzatziki on the bottom half of the bun. Add rocket, barbecued beetroot, and a patty. Finish with red onion and some more tzatziki.

Tip: Try pickling the red onions. Bring to a boil 2 dl water, 4 tbsp red wine vinegar and 2 tbsp sugar. Mix with red onion slices and let soften for 30 minutes.
