Cauliflower, chickpea, sweetpea and spinach bake

3-4 servings


  • 240 g Pulled Oats®
  • 1 head cauliflower flowered
  • 400 g halved parboiled baby potatoes
  • 400 g chick peas
  • 150 g sweet peas
  • 200 g baby spinach
  • 100 ml oil
  • 3 tbsp turmeric
  • 2 tbsp cumin seeds
  • 3 tbsp honey (or agave syrup)
  • salt and pepper


  1. Place potatoes, cauliflower and chickpeas in oven dish.
  2. Add oil, honey and all spices.
  3. Mix well and coat everything.
  4. Bake in oven at 180c for 15-20 min, until potatoes and cauliflower are nearly cooked.
  5. Take dish out of oven and Mix pulled oats well into the dish. Bake for a further 7-8 min.
  6. Layer to plate with baby spinach and sweet peas. Serve.
