CREAMY PEANUT ZOODLE SALAD

To create the zoodles (=zucchini noodle), you will need a spiralizer, but you can also use a cheese slicer or knife. A little roughness in the texture doesn’t change the flavour.

Ingredients

  • 240 g of Pulled Oats® Nude
  • 2–3 cm of fresh ginger
  • 1 tbsp sesame seeds
  • Oil for frying
SALAD
  • ¼ napa cabbage
  • ½ cucumber
  • 1 zucchini
  • 50 g mung bean sprouts
  • ½ chili
  • ½ bunch of mint
  • ½ bunch of coriander
DRESSING
  • 1 garlic clove
  • 1 dl of peanut butter
  • 1 dl of coconut milk
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 4 tbsp soy sauce

Instructions

  1. Cut the napa cabbage into thin strips. Wash the zucchini and cucumber, then cut them with the spiral slicer, cheese slicer or knife into thin “noodles”. Chop the chili, mint and coriander, and combine the salad ingredients together.
  2. Blend the dressing ingredients together in a blender and pulse until well combined and creamy. Add salt if needed.
  3. Stir the Pulled Oats® with the sesame seeds and chopped ginger in a hot pan with oil, until they are crispy on the surface. Add Pulled Oats® to the salad, pour the dressing over and toss to combine. Top with the remaining herbs and serve with lime wedges if desired.
