Deli OatBites & Eggplant

Shoutout to all the eggplant lovers out there! Ginger, soy and garlic are a flavor match made in heaven. This easy flavor bomb guarantees successful Chinese eggplant wok, to which Deli OatBites gives nice crispness.

Ingredients

  • 120 g Deli OatBites Chili-Ginger
  • 1 eggplant
  • 1 garlic clove
  • Chili
  • 3 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 2 tsp sugar
  • 1 tbsp sesame oil
  • 2 chopped spring onions
  • Serving:
  • Boiled rice
For serving
  • Boiled rice

Instructions

  1. Chop the garlic and ginger. Slice the eggplant and stir fry with oil for a few minutes over medium heat with garlic and ginger, until the eggplant slices are tender.
  2. Add Deli OatBites to the pan and fry for a few minutes. Stir in the soy, vinegar, sugar and sesame oil. Add chili to your taste.
  3. Finish with chopped spring onions. Serve with rice.
