Deli OatBites & Eggplant
Shoutout to all the eggplant lovers out there! Ginger, soy and garlic are a flavor match made in heaven. This easy flavor bomb guarantees successful Chinese eggplant wok, to which Deli OatBites gives nice crispness.

Ingredients
- 120 g Deli OatBites Chili-Ginger
- 1 eggplant
- 1 garlic clove
- Chili
- 3 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 2 tsp sugar
- 1 tbsp sesame oil
- 2 chopped spring onions
- Serving:
- Boiled rice

Instructions
- Chop the garlic and ginger. Slice the eggplant and stir fry with oil for a few minutes over medium heat with garlic and ginger, until the eggplant slices are tender.
- Add Deli OatBites to the pan and fry for a few minutes. Stir in the soy, vinegar, sugar and sesame oil. Add chili to your taste.
- Finish with chopped spring onions. Serve with rice.
