Deli OatBites Gyros

Ingredients
- 120 g Deli OatBites Mushroom Truffle
- 100 g mushrooms, sliced
- 100 g leek, sliced
- 1 tsp rosemary
- 1 tbsp olive oil
- Pinch of Salt
Saffron Lemon tahini
- 1 dl tahini
- 3 tbsp warm water
- 0,2 g saffron
- Juice of half a lemon
Tatziki
- 1 dl oat yoghurt
- 1 clove garlic, minced
- ¼ cucumber, grated and excess liquid squeezed out
- Juice of half a lemon
- Pinch of salt
Garnish
- 50 g red cabbage, thinly sliced
- 2 pita breads, toasted on pan
Instructions
- Fry everything together in a large pan until the leek and mushrooms are cooked.
- In a large bowl combine the saffron and warm water, add in the tahini and whisk together with lemon juice and salt.
- Make the tatziki. Mix yoghurt, garlic, cucumber, salt and lemon juice together in a small bowl and season with salt
- Cut open the pita breads and put a large spoon of tatziki inside. Fill with fried Deli OatBites mushrooms and leek and garnish with red cabbage and saffron tahini.
