Grilled vegetables

The Nordic summer offers you smoky charred vegetables and bright nights. Pulled Oats® Pan Fried Patties go together perfectly with them.

Ingredients

  • 1 pack Pulled Oats® Pan Fried Patties
  • 200 g zucchini
  • 200 g new potatoes
  • 250 g cherry tomatoes
  • 1 bell pepper
  • 1 red onion
  • 100 g mushrooms
  • 1 tbsp mint
  • 2 tbsp spring onion
  • 1 lime (juiced)
  • Salt
Marinade
  • 3 garlic cloves
  • 8 tbsp olive oil
  • 1 lime (zested and juiced)
  • 1 orange (zested and juiced)
  • 2 tbsp fresh thyme
  • 1 tbsp honey
  • Salt and black pepper
Dip sauce
  • 200 g yoghurt
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp mint
  • 2 tbsp spring onion
  • 1 lime juiced
  • Salt

Instructions

  1. Chop the garlic cloves. Grate and juice lime and orange. Mix the marinade ingredients.
  2. Mix the dip sauce ingredients. Let sit for a while.
  3. Cut the vegetables into smaller pieces and pour in the marinade.
  4. Set the vegetables on foil and fry on a grill.
  5. Fry the Pan Fried Patties on a grill for 2-3 minutes on both sides. Apply the Pan Fried Patty sauce on both sides.

You can change the vegetables in this recipe according to your taste or to what is available. Serve Pan Fried Patties with vegetables and dip.
