GREEK FILO ROLLS

Handling filo pastry requires a little practice and patience but it’s worth it! You can taste the Greek sunshine in these rolls.

Ingredients

  • 1 pack filo pastry with almonds
  • 100 g butter
FILLING
  • 240 g of Pulled Oats® Tomato
  • 250 g cherry tomatoes
  • 1 bunch of fresh thyme
SAUCE
  • 1 carton thick yoghurt
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 50 g feta cheese

Instructions

  1. Preheat oven to 175°C. Measure the sauce ingredients into a bowl, crumble in the feta cheese and mix. Allow it to sit for the flavours to fully blend.
  2. Melt the butter in a small saucepan. Cut the filo pastry into 10 x 10 cm sized squares. Brush the upper layer with butter and place another square on top of it. Fill with a spoonful of Pulled Oats®, half a cherry tomato and thyme. Fold the edges upwards, to completely enclose the filling. Brush the rolls with butter and bake in the oven for 15 minutes.
  3. Serve with the sauce.
