Lemon Sauce and Coconut Rice

Nordic Oatballs® Meze and this recipe are both inspired by the spicy flavours of the Middle East. If you like lemons, you’ll love this dish!

Ingredients

  • 1 bag Nordic Oatballs® Meze
  • 1 onion
  • 1 tsp paprika powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • ½ red chili
  • 200 g Crushed tomatoes
  • 2 tbsp Fresh cilantro
  • 2 tbsp flat leaf parsley
  • Juice and zest of 1 lemon
  • Salt
  • black pepper
  • oil
Coconut Rice
  • 4 dl coconut milk
  • 3 dl water)
  • 3½ dl jasmin rice
  • 1 tsp Salt

Instructions

  1. Start with the Coconut Rice. Bring coconut milk and water to a boil. Add rice and salt. Cook for 20 – 30 minutes or until done.
  2. Chop and sauté onion. Add paprika powder, turmeric, cumin, chili and Nordic Oatballs. Keep cooking for a couple of minutes.
  3. Add lemon juice and zest. Add crushed tomatoes and season with cilantro, parsley, salt and pepper. Let simmer for 5 minutes.
