Pad Thai for professionals

Ingredients

  • 1,5 kg Pulled Oats® Nude
  • 30 eggs
  • 1,5 kg blanched broccolini
  • 1 kg sliced carrots
  • 4 bunches of coriander leaves (cilantro)
  • 1 l sweet chili sauce
  • 500 ml soy sauce
  • 100 g sesame seeds
  • 1 kg sliced carrots
  • 100 g minced ginger
  • 6 kg cooked egg noodles
  • sesame oil for frying

Instructions

  1. Fry onions and ginger until soft.
  2. Add sweet chilli and soy sauce and let reduce for 3-4 min.
  3. Put broccolini, carrots and Pulled Oats in a GN. Cover with the sauce.
  4. Roast in oven for 8 min at 180 °C.
  5. Stir in with hot noodles and sesame seeds.
  6. Fry scrambled eggs and add to mix, stir well and serve with fresh coriander.
