Pad Thai for professionals
Ingredients
- 1,5 kg Pulled Oats® Nude
- 30 eggs
- 1,5 kg blanched broccolini
- 1 kg sliced carrots
- 4 bunches of coriander leaves (cilantro)
- 1 l sweet chili sauce
- 500 ml soy sauce
- 100 g sesame seeds
- 1 kg sliced carrots
- 100 g minced ginger
- 6 kg cooked egg noodles
- sesame oil for frying
Instructions
- Fry onions and ginger until soft.
- Add sweet chilli and soy sauce and let reduce for 3-4 min.
- Put broccolini, carrots and Pulled Oats in a GN. Cover with the sauce.
- Roast in oven for 8 min at 180 °C.
- Stir in with hot noodles and sesame seeds.
- Fry scrambled eggs and add to mix, stir well and serve with fresh coriander.
