Pulled Oats® Banh mi

Banh mi is a delicious & juicy Vietnamese sandwich. In this recipe, a crusty baguette is filled with Pulled Oats® accompanied with pickled vegetables to have a nice soft crunch and tartness and cucumber, coriander and sriracha to bring the freshness and spiciness. Enjoy as a snack or to-go lunch in a park!

Ingredients

  • 240 g Pulled Oats® Nude
  • 5-6 tbsp soy sauce
  • 4 baguettes
  • 1/2 cucumber
  • Mayonnaise (vegan)
  • Sriracha
Pickled vegetables
  • 3-4 carrots
  • Small piece of red cabbage
  • 6 tbsp rice vinegar
  • 2 tsp salt
  • 2 tbsp sugar
Optional
  • Red onion slices & coriander

Instructions

  1. Peel and grate the carrots. Slice the cabbage into thin slices and add both into a sealable container. Add the rice vinegar, sugar and salt into the container and mix. Let it rest in the refrigerator for 2 to 3 hours.
  2. Fry Pulled Oats® with soy sauce for about 5 minutes.
  3. Slice the cucumber into thin slices and cut the bread in half.
  4. Spread the mayonnaise on the bread and add some Sriracha. Layer in the Pulled Oats®, the cabbage and carrot mixture and top with cucumber slices. Add red onion and coriander to taste.
