Vegan Deli OatBites Mushroom-Truffle-carbonara
Our take on a classic Carbonara, veganised! This rich and creamy dish is a perfect weeknight meal.

Ingredients
- 120 g Deli OatBites Mushroom Truffle
- 175 g spaghetti
- 1 dl cashew nuts
- 2 garlic cloves
- 1 dl plant-based cream
- 1-2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 1/2 tsp hot pepper powder
- Salt & black pepper
- 2 tbsp olive oil
- Vegan parmesan
- Chopped leaf parsley
In addition
- Vegan parmesan
- Chopped leaf parsley
Instructions
- Cook the pasta according to the instructions on the package.
- Boil a few deciliters of water. Turn off the heat. Soak the cashew nuts in the water for 10 minutes. Drain the water and put the nuts in a blender with cream, nutritional yeast, lemon juice and spices. Blend until smooth.
- Peel and chop the garlic. Saute in a pan in oil for a few minutes.
- Add Deli OatBites and the cooked spaghetti into the pan. Pour the blended sauce over and toss together.
Finish with parmesan and herbs.
