Winter Salad

Colour your Christmas dinner with this Winter Salad and Mulled Wine marinated Pulled Oats®. The filling Winter Salad is ready for the winter’s feast.

Ingredients

Mulled Wine Marinade
  • 240 g Pulled Oats® Nude
  • ½ dl mulled wine
  • ½ dl olive oil
  • 1 tbsp lemon juice
  • 3 tsp fresh rosemary
  • 1 tsp apple cider vinegar
  • 1 tsp Ceylon cinnamon
  • 1 tsp ginger powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • Black pepper
Beetroot Salad
  • 300 g beetroot (cooked)
  • 200 g carrot (cooked)
  • 1 apple
  • 1 pickle
  • 1 small red onion
Dressing
  • 1 dl coconut cream
  • 1 dl oat fraiche
  • 2 tbsp beetroot cooking water
  • 1 tsp apple cider vinegar
  • 1/6 tsp salt

Instructions

  1. Mix the marinade ingredients in a bowl. Add Pulled Oats. Cover the bowl and let sit in a fridge overnight (or 3 hours minimum).
  2. Cook beetroot and carrot in separate kettles until soft.
  3. Dice beetroot, carrot, apple, onion and pickle.
  4. Mix the dressing ingredients together.
  5. Fry the Pulled Oats on a pan for a couple of minutes.
